Bamboo Shoots with Smoked Pork Stir-Fry

Ingredients

Smoked Protein:

  • 200g Chinese cured pork belly* (sub: 150g smoked bacon + 50g pancetta)
    Vegetables:
  • 200g fresh bamboo shoots (or 1 can, drained)
  • ¼ yellow onion (50g)
  • 5 green beans* (sub: snow peas)
    Sauce:
  • 1 tbsp light soy sauce
  • ½ tsp sugar
  • ¼ tsp white pepper
  • 1 tsp cooking oil
    Prep Essentials:
  • ½ tsp salt (for blanching)

Instructions

  1. Prep Proteins
    • Steam smoked pork 15 mins → chill → slice thinly
  2. Blanch Veggies
    • Boil 4 cups water + ½ tsp salt →
      a) Bamboo shoots: 3 mins
      b) Green beans: 2 mins → ice bath
  3. Stir-Fry
    • High heat: 1 tsp oil → pork → render fat 2 mins
    • Add onion → 1 min
    • Toss in bamboo & beans → 2 mins
    • Season with sauce mix → toss 30 secs

Critical Safety Note

⚠️ ​Green beans must reach 75°C/165°F
Test doneness: Beans should bend slightly before snapping. Undercooked beans contain lectin toxins.

Substitutions

  1. Chinese cured pork → Turkey bacon (low-sodium)
  2. Bamboo shoots → 1 zucchini (sliced)
  3. Light soy sauce → Coconut aminos
